Ingredients:

  • 1 cup broccoli florets
  • 1 cup pumpkin cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Vegetable stock or water
  • Salt & pepper to taste
  • Lemon juice, and coriander/basil leaves for added freshness

Method:

  • In a pot, saute onions and garlic until translucent.
  • Add pumpkin cubes and broccoli florets; cover with vegetable stock or water.
  • Alternatively, you can roast the pumpkin cubes and broccoli before adding them to the soup for a richer, caramelized flavor.
  • Bring to a boil; simmer until vegetables are tender (~15 minutes).
  • Blend until smooth; season with salt & pepper, garnish with fresh basil or coriander leaves and serve hot with a squeeze of lemon juice.
